Road Trip Snacks

Now that summer is in full swing, weekends away are quickly being booked up with the inevitable road trip. I’m not a person that deals with sudden hunger pangs well, so having snacks on hand is essential! A few weekends ago we had a 3+ hour long car ride ahead of us, so I spent two hours in the kitchen to whip up these five road trip snacks for the journey. I thought I’d share […]

2016 Recap

Around this time last year, I put together a recap of 2015 and our ‘Big Trip’ adventures (coincidentally, it also marked our 1 year travel anniversary!). This 2016 Recap (marking 2 years since we first flew to Nicaragua!), started in Auckland, NZ where we set up residence after flying there from Chile.  After living in Auckland for a few months, we packed up again and set off on an epic road trip of New Zealand. We […]

NZ Road Trip: By the Numbers

NZ Road Trip!
From mid-April to mid-July, Mac & I drove around the country for an NZ Road Trip in our little boat-sized 1997 Toyota Camry. We hiked, we camped, we saw & we adventured. And it was amazing. New Zealand is such a beautiful country and I’m so incredibly happy that we had almost 3 full months to explore almost every nook & cranny.

We saw glaciers & mountains, and waterfalls & pristine lakes. We admired […]

Cruising Around the Coromandel

Coromandel Peninsula, NZ
The Coromandel Peninsula is located east of Auckland and is separated from the city by the Firth of Thames and the Hauraki Gulf. It’s known for its stunning beaches, rugged & mountainous geography, and its undeniable charm. Mac & I spent a few days circumnavigating the peninsula on our way back to Auckland. We had briefly visited this area when we hiked the Pinnacles track, but there was certainly SO much more to […]

Skydiving in Taupo!

Taupo, NZ
Throughout our road trip there was one big ‘thing’ that Mac & I had talked about doing. It’s no secret that New Zealand is somewhat of an adventure capital. We’ve done our fair share of hikes & such, but one activity I had wanted to check off my bucket list was skydiving. Mac had already bungee jumped when he was in NZ 6 years ago (and I have no desire to jump off a […]

Recapping June

As per usual, I’m a few days late with this post. I do hope you’ll forgive me – but this was one of our best months yet & I just can’t resist recapping June (even if it is a week or so into July by the time I post this)!

Rainy Days in Taupo & Rotorua

The middle of the North Island is chalk full of different activities to keep your day busy. Anything from river rafting, bungee jumping, thermal hot pools, to hiking and skydiving. The winter weather returned for Mac & I and we were somewhat stuck inside for our days in Taupo and Rotorua. The miserable weather meant that we had to pass on the thrill-seeking adventures (for now…). But fortunately the rain cleared a bit and we […]

NZ Road Trip: East Coast

The East Coast of the North Island is often overlooked as a travel destination in New Zealand. It’s remoteness and lack of specific ‘touristy things’ makes it easy to skip for many people. Mac & I are not those people. With an open schedule and a full tank of gas, we headed Out East (as they like to say)!
Our first stop was in Napier. This city is famous for it’s abundance of Art Deco references. The […]
