Brown Rice Energy Bars

I first discovered these Brown Rice Energy Bars when I was living in Auckland. I was a cook at a daycare and wanted an alternative to the typically sweet treats I was making for the kiddos for afternoon tea. They’re easy to whip up and since they’re filled with protein (from the brown rice) and healthy fats (from the chia seeds and tahini) they’ll keep you full & fueled all afternoon.

Instructions
  1. In a medium-sized pot, bring broth (or water) to a boil. Once boiling, add rice and reduce heat to medium-low. Cover and simmer until rice is cooked and liquid is absorbed - about 30 minutes. Add more water if needed to prevent sticking.
  2. While the rice is cooking, add soy sauce, tahini, apple cider vinegar, and ginger in a small bowl. Stir to combine.
  3. Once rice is cooked, immediately stir in sauce, chia seeds, and green onions. Stir to combine everything. Let chill 5-10 minutes, until cool enough to handle.
  4. You can either press mixture into a baking dish or roll the mixture into balls (about 1-2 Tbsp in size). Coat with a mixture of sesame seeds and refrigerate 30 minutes before serving. For the bars option, cut mixture into bite-sized squares to serve.

Road Trip Snacks

Now that summer is in full swing, weekends away are quickly being booked up with the inevitable road trip. I’m not a person that deals with sudden hunger pangs well, so having snacks on hand is essential! A few weekends ago we had a 3+ hour long car ride ahead of us, so I spent two hours in the kitchen to whip up these five road trip snacks for the journey. I thought I’d share […]

My First Foray Into Catering

Last week, my co-worker Kelly asked me to help her with the catering for a dinner party for her aunt. Sounds fun, right? Well, the dinner party was for 40 people!! Fortunately, Kelly used to work in the catering business, so she knew just where to start in terms of menu planning & grocery shopping. Since this was such a big party, she needed some extra hands to help with cooking & I was more […]

It’s also relatively easy to let them collect dust and turn to Pintrest or Instagram for meal ideas instead. That’s […]

Mix n Match Dinner Bowls

Recently Mac & I had some friends over for dinner. I didn’t really know what to make, so I ended up whipping up a bunch of things, piling them all together in a bowl, and calling it dinner! Mix n Match Dinner Bowls to be precise!

The above picture was of my leftovers the following day. Don’t worry, we do actually serve food to our friends & guests in proper bowls & plates and not Tupperware!
