Brown Rice Energy Bars

I first discovered these Brown Rice Energy Bars when I was living in Auckland. I was a cook at a daycare and wanted an alternative to the typically sweet treats I was making for the kiddos for afternoon tea. They’re easy to whip up and since they’re filled with protein (from the brown rice) and healthy fats (from the chia seeds and tahini) they’ll keep you full & fueled all afternoon.

Brown Rice Energy Bars | A Taste of Trace
  1. In a medium-sized pot, bring broth (or water) to a boil. Once boiling, add rice and reduce heat to medium-low. Cover and simmer until rice is cooked and liquid is absorbed - about 30 minutes. Add more water if needed to prevent sticking.
  2. While the rice is cooking, add soy sauce, tahini, apple cider vinegar, and ginger in a small bowl. Stir to combine.
  3. Once rice is cooked, immediately stir in sauce, chia seeds, and green onions. Stir to combine everything. Let chill 5-10 minutes, until cool enough to handle.
  4. You can either press mixture into a baking dish or roll the mixture into balls (about 1-2 Tbsp in size). Coat with a mixture of sesame seeds and refrigerate 30 minutes before serving. For the bars option, cut mixture into bite-sized squares to serve.

Mix n Match Dinner Bowls
