Mix n Match Dinner Bowls

Recently Mac & I had some friends over for dinner. I didn’t really know what to make, so I ended up whipping up a bunch of things, piling them all together in a bowl, and calling it dinner! Mix n Match Dinner Bowls to be precise!

The above picture was of my leftovers the following day. Don’t worry, we do actually serve food to our friends & guests in proper bowls & plates and not Tupperware!

Whether […]

Post-Vacation Meals – Quick, Easy & Inexpensive! (+ How To!)

When Mac & I got back from Barbados, there was practically nothing left in our fridge. Save for a few apples, a head of cabbage, and some sorry daikon radishes, we didn’t have much to eat! After a quick trip to the grocery store – where I spent less than $14! – I came home to whip up the following:

A/ Quinoa. B/ Mixed Vegetable Quiche. C/ Roasted Tandoori Chickpeas. D/ Sweet Potato & Tomato Stew

It’s not super glamorous, […]

Hiking Barbados | Bath to Bathsheba

For a small island filled with amazing beaches, stunning vistas, and a relaxed ‘island-life’ feel, it might seem a little unusual that Barbados is actually FULL of hiking trails! In fact, the National Trust coordinates and leads organised hikes all over the island several times a week. The turnout can often be more than 100 people!
Bath to Bathsheba Hike
Mac & I had heard great things about the Bath to Bathsheba hike on the east coast […]

Beautiful Barbados

It had only been 6 months since we had been travelling, but when Mac’s parents asked us if we wanted to join them in beautiful Barbados for a week, we couldn’t say no! The 4 of us stayed in a house near Enterprise Beach (aka Miami Beach) just outside the town of Oistins (on the southern west coast of the island). We spent our days in the sun – the weather was GORGEOUS the whole […]

2016 Recap

Around this time last year, I put together a recap of 2015 and our ‘Big Trip’ adventures (coincidentally, it also marked our 1 year travel anniversary!). This 2016 Recap (marking 2 years since we first flew to Nicaragua!), started in Auckland, NZ where we set up residence after flying there from Chile.  After living in Auckland for a few months, we packed up again and set off on an epic road trip of New Zealand. We […]

2016 Book List

I had so much fun compiling last years book list, that I couldn’t resist doing a new post for my 2016 Book List. I read 53 books in 2016 and I feel like I did a good job of covering a broad range of topics & genres! This was mostly due to the fact that we spent 3+ months road tripping around New Zealand and I had access to various hostels’ “give one take one” […]

CSA Box: Week 6

CSA Box #6 | December 21
I’m a few weeks behind in posting this recap of my latest CSA Box – mostly due to the chaos of the holidays! Thankfully, I was able to put quite a few of the veggies to good use in my festive cooking & baking sessions!

It’s definitely a LOT cooler these days and the change in weather is reflected in what I received in the CSA Box this week – lots […]
