Brown Rice Energy Bars

I first discovered these Brown Rice Energy Bars when I was living in Auckland. I was a cook at a daycare and wanted an alternative to the typically sweet treats I was making for the kiddos for afternoon tea. They’re easy to whip up and since they’re filled with protein (from the brown rice) and healthy fats (from the chia seeds and tahini) they’ll keep you full & fueled all afternoon.

  1. In a medium-sized pot, bring broth (or water) to a boil. Once boiling, add rice and reduce heat to medium-low. Cover and simmer until rice is cooked and liquid is absorbed - about 30 minutes. Add more water if needed to prevent sticking.
  2. While the rice is cooking, add soy sauce, tahini, apple cider vinegar, and ginger in a small bowl. Stir to combine.
  3. Once rice is cooked, immediately stir in sauce, chia seeds, and green onions. Stir to combine everything. Let chill 5-10 minutes, until cool enough to handle.
  4. You can either press mixture into a baking dish or roll the mixture into balls (about 1-2 Tbsp in size). Coat with a mixture of sesame seeds and refrigerate 30 minutes before serving. For the bars option, cut mixture into bite-sized squares to serve.

Weekly Salad Challenge | Plant-Powerful Proteins

Now that you’ve got the base of your big salad bowl made, it’s time to add some plant-powerful proteins for some serious staying power.
Plant-Powerful Proteins
Nuts & Seeds
Adding nuts and/or seeds is one of the easiest ways to add protein (and good fats!) to your salad bowl. Raw or roasted, nuts and seeds will add a nice crunch to your meal. Seeds are much less expensive than nuts, and my go-tos are sunflower seeds, sesame seeds, […]

Weekly Salad Challenge

Now that summer is upon us, the amount of local fresh fruit and vegetables is incredibly abundant. We all know that eating more fruits and vegetables is good for us, yet it often happens that veggies bought with the greatest of intentions usually go forgotten and untouched in the crisper drawer.

When hunger strikes, what if instead of hypothetically reaching for handfuls of dates and spoonfuls of peanut butter, there was a giant bowl of delicious […]

Balcony Garden Update

It’s been almost 2 months since I first posted about my balcony garden. I figured it was time for an update on how things are going (err.. not going…).
Things I’ve Learned
Remember when I said that our balcony only gets a ‘partial’ amount of sun? Well, this is still true. But because it’s mostly direct sun for those few hours, the sunlight actually gets reflected off the walls, ceiling, and floor of the balcony. This makes […]

Road Trip Snacks

Now that summer is in full swing, weekends away are quickly being booked up with the inevitable road trip. I’m not a person that deals with sudden hunger pangs well, so having snacks on hand is essential! A few weekends ago we had a 3+ hour long car ride ahead of us, so I spent two hours in the kitchen to whip up these five road trip snacks for the journey. I thought I’d share […]

How to Reduce Plastic Waste | Small Steps

I saw a video  today about how our oceans are slowly becoming contaminated with tiny bits of plastic. In fact, there is a zone in the ocean approximately the size of TEXAS that is comprised of floating bits of plastic. It’s estimated that by 2050 there will be more plastic than fish by weight in the ocean. That’s only 33 years from now.

Did you know? Plastic does not biodegrade or decompose. Every single piece of […]

Bulk Barn’s Reusable Container Program

A few months ago, Bulk Barn introduced their Reusable Container Program to all stores nation-wide. What is the Reusable Container Program, you ask? Well, it’s actually very exciting! (Well, for me at least – as someone who is constantly looking to reduce their plastic waste!) Essentially, you bring in your own containers from home and use them instead of Bulk Barn’s plastic bags to gather your bulk goodies.

Before you start participating in this Reusable Container […]

Life Lately – Summer Beginnings

Life Lately | Summer Beginnings
Summer is here! Can you feel it*?

*It = the immense heat that surrounds you the second you step outside and threatens to burn pale, freckled skin to a crisp.

After weeks of rainy and cloudy days, I’m thrilled that blue skies and relentless sunshine are here at last! Despite how uncomfortably hot the days may be, I say “bring it on!”

The arrival of summer means new experiences and events. Here’s just a […]
