A few weeks ago I had another catering opportunity! The same friend for whom I made desserts for her bridal shower asked me to cater her vegan wedding brunch! There were eight ladies getting ready together before the wedding and I was asked to provide some snacks and treats for them. I wanted to make each morsel bite-sized and mess-free for the busy wedding morning. Here’s what I made!

Savoury

I served my go-to vegan quiche (filled with sauteed zucchini, peppers, and onions) with a creamy yet tangy tomato chilli sauce.

These vegan pinwheels were a huge hit too. I filled these with a cheezy hummus, sun dried tomatoes, and fresh basil; they were perfectly portioned which made for easy snacking between getting hair and make up done!

The flat bread I made was probably the most popular of the bunch! Thick flatbread was topped with a tofu ricotta, roasted veggies (peppers, cherry tomatoes, red onions, zucchini, and peaches!) and baked, then drizzled with a delicious chimichurri sauce. Talk about colourful & vibrant! (Not to mention super flavourful!)

Sweet

Since the bride is a die-hard chocoholic, I knew I needed to make something to satisfy the craving. I made mini-loaves of gooey chocolate coconut banana bread and they were very well received!

And finally, what brunch is complete without cinnamon rolls?? I pre-assembled the rolls at home and then baked them while the girls were getting ready. The house smelled absolutely wonderful.
