A Vegan Birthday Feast
Last week was my birthday! I’ve been out of the country for my past two birthdays (2015 in Colombia, and 2016 in NZ). So this year, I wasn’t going to pass up an opportunity to celebrate here at home. In true Tracey fashion, I opted to provide a vegan birthday feast in exchange for a fun afternoon with friends! I picked my ‘menu’ items based on a few things: ease of preparation, crowd pleasing/finger foods, and level of deliciousness! The following recipes are many of my ‘go-to’s’; snacks and meals I make all the time and readily recommend to friends and family.
Note: If it wasn’t abundantly clear by now, I LOVE to cook. To prepare for my vegan birthday feast I spent quite a few hours in the kitchen and I enjoyed every minute of it. Well, more or less… I’m looking at you, burnt coconut bacon… To the less enthusiastic cook, tackling all the recipes I made could be daunting. Luckily, the following recipes stand well on their own, or can be incorporated as components for a main meal. A lot of them are even great to have on hand for snacking purposes (coconut bacon, granola, quiche, and blondies to name a few!) I hope you find one (or all!) of these recipes inspiring enough to make yourself! Let me know if you end up trying any!
Coconut Bacon (from Plant Powered Families by Dreena Burton) // Savoury Turmeric Spice Granola (from The Full Helping) // Chickpea Flour Quiche (from Power Hungry) // Sweet Potato & Lentil Fritters with Lemony Avocado Sauce (from Blissful Basil) // Easy Vegan Lasagna (from Hummusapien) // Veggie Tray with homemade Roasted Garlic Hummus and Protein-Packed Pesto (from Oh She Glows)
Sweet Potato Chocolate Cake with Chocolate Sweets Frosting (from Plant Powered Families by Dreena Burton) // Sweet Potato Salted Caramel (from The Vegan 8) // Banana Bread Blondies (from The Full Helping) // Coconut Macaroons (from Oh She Glows Every Day by Angela Liddon)
I hope you enjoyed a glimpse into my vegan birthday feast! Which recipes did you like the most?
