CSA Box #10 | March 1
This week’s CSA Box was supposed to be the last installment of Mac’s & my subscription to bi-weekly local & organic produce from Plan B Organic Farms. However, since we love getting these fresh veggies every other week, we’ve decided to extend our subscription another 10 weeks!
Week 10 Haul:
- Living summer lettuce
- 1 butternut squash
- Living pea tenders
- 8 potatoes
- 8 apples
- 2 parsnips
- 21 shiitake mushrooms
- 2 sweet potatoes
Total: 8 items
Week 9 Meals & Plans:
I successfully committed to 3 out of 4 of my recipe plans from last time! I did make chili with sweet potato corn bread, and it was super delicious! (The cornbread was a tad too sweet for my preferences, but it was still quite yummy!)
The chocolate beet cake from Blissful Basil was so delicious! I think next time I’d roast/steam the beets because the end flavour was a bit… earthy. I’d also blend the oats to a very fine grind – I didn’t and the overall texture ended up being not as soft as I’d have liked. Aside from those two small tweaks though, I’d highly recommend that cake! And check out that gorgeous colour!
Week 10 Recipes & Plans:
Shiitake Mushrooms: I just added a new cookbook to my (admittedly too large) collection – The First Mess by Laura Wright (from the blog of the same name). There’s a recipe in it for BBQ Mushroom Toast that looks phenomenal and totally worthy of these precious shiitakes. I’m also thinking I could whip up an epic mushroom/lentil veggie burger. I’ll keep you posted on that!
Butternut Squash: My co-worker told me about a butternut squash mac & cheese recipe that uses coconut milk and not many other ingredients. I’m skeptical that it’ll be a bit too sweet, but I’m willing to test it anyways! It should be fairly easy to modify if it isn’t savoury enough.
Sweet Potatoes: Brandi from The Vegan 8 has a recipe for Miso-Glazed sweet potatoes that looks incredibly delicious. I imagine it’d pair well in a dinner bowl with grains, some living lettuce & pea tenders, and roasted chickpeas.
Are you a mushroom lover or hater? I know many people are thrown off by the texture, but I personally love ‘em! Do you have a favourite way to use parsnips?? I’m struggling to come up with something!!
